Today we are going to make Creamy Pureed Broccoli Soup. It’s really such an easy soup recipe and it tastes oh so good! You can serve Creamy Pureed Broccoli Soup with a loaf of fresh bread or croutons.
Some people prefer to add 1/2 cup of half-and-half for an extra layer of taste. I don’t but it is a popular option.
- 2 tablespoons butter
- 1 tablespoon extra-virgin olive oil
- 1 onion, chopped
- 1 stalk celery, chopped
- 2 cloves garlic
- 1 teaspoon chopped fresh thyme
- 3 cups broccoli chopped
- 2 cups of water
- 4 cups chicken broth
- 1/2 teaspoon salt and pepper
Heat butter and oil over medium heat until your butter melts. Then add in your chopped onion, garlic, thyme, and celery. Stir occasionally until softened, which should take about 5 minutes.
Next, add your broccoli, water, and broth. Simmer for about 8 minutes, or until the broccoli is really tender.
Now you are going to take the soup and puree it in the blender until smooth. Please remember to use caution because it is hot! Before you are finished, add in a dash of salt and pepper and then blend for another few seconds.
